Osa Rooftop Restaurant debuts at AC Hotel on Friday

Rising above Pasadena’s Playhouse Village, Osa—the sleek new rooftop restaurant crowning the just-opened AC Hotel Pasadena—promises an immersive dining experience that blends mountain views, fire-lit terraces, and a produce-forward menu shaped by California’s seasonal bounty.

Perched along the historic Rose Parade route at the corner of Colorado Boulevard and Madison Avenue, Osa occupies one of the most recognizable streets in the city. Here, vistas of the San Gabriel Mountains frame a dining space centered around an ancient olive tree, softened by landscaping inspired by the nearby Angeles National Forest. Fire pits flicker at sunset, offering a natural focal point for diners lingering over cocktails.

The latest concept from Boulevard Hospitality Group, Osa has been crafted in collaboration with Suplex Design & Build Agency. The result is a rooftop retreat that feels simultaneously elevated (sorry) and welcoming, one intended to appeal to locals and visiting hotel guests.

Inside the kitchen, Los Angeles native Carlos Couts leads the charge as executive chef. Known for his work with Sushi by Scratch and RokushoLA, Couts brings a globally influenced, ingredient-driven sensibility to Osa’s menu. Expect dishes like King Ora Salmon Crudo, Wagyu Burgers, roasted beets, and hand-pressed tostadas, alongside grilled swordfish sourced with sustainability in mind.

Osa’s name—Spanish for “female bear”—nods subtly to California’s state symbol, while its cocktail program leans heavily into regional flavors. Overseen by Pete St. Peter of Capri Club, the drinks list balances local spirits with creative flourishes: the smoky, cactus-infused Mezcal Cooler, a bright citrusy spritz built from three California aperitifs, and a beet-red margarita aptly named Drop the Beet.

“We’re proud to bring a Boulevard concept to Pasadena,” said Boulevard founder Freddie Braidy in a statement. “It’s a city we’ve long admired for its charm and character, and we’re excited to contribute something vibrant and welcoming to the community.”

Opening for nightly dinner service from 4 to 10 p.m., Osa also plans to debut a weekend brunch later this summer, when Pasadena’s rooftop dining scene will (again, sorry) reach a new level .
